Frothed Milk taste

For a good tasting cappuccino should the froth taste like milk?

Sounds like a silly question but yesterday at a well known coffee bar the girl assured me she could. The presentation was good, the actual coffee taste was fine but the froth on top spoilt it tasting very watery presumably due to over frothing or insufficient milk?

Your advice please welcomed:D

WIthout seeing the drink itself it is hard to correctly identify the cause of the problem

However, it is usually 1 of 3 things;

1. Milk over heated and therefore the fats start to break down and the milk goes thin, like water

2. Insufficient air introduced whilst steaming

3. Too much air whilst steaming giving a dry effect and the foam simply evaporates

What was the texture like?

Did you get a photo on your phone by any chance?

The taste should have been of a creamy espresso, not just milk on its own

As well as what Glenn mentioned it could also be the milk they used i.e. skimmed (which in my opinion tastes like water) or perhaps they didn't purge the steam valve before frothing which could mean a lot of excess water was added. Although I'm not sure commercial coffee machines suffer this issue. Or maybe they've actually watered down the milk or used a jug with some residule water in it.

Yes, I think Glens' No 1 suggestion is the correct answer. I didn't take a photo but the texture was one of very small bubbles, light in colour with a watery taste. Shame really as the assistant had certainly tried.

A hour later I came home made a Hill Tribe peaberry coffee with my French press, frothed some pasturised milk to pour on top and that was rather nice by comparison.
