It's exactly the same principle. With an Airscape, you push down the seal and a lot of air comes out. With the bottle stopper, you push doen the plunger and a small amount of air comes out. The Airscape and the wine bottle both have rigid sides. The only difference I can see is that the Airscape is a bit quicker and once you're down to the top of the beans there's no way to take and more air out - leaving a partial vacuum. With the stopper, you could pump until the removal of air sucks pretty much all the air out and then the oils might leach, but you simply stop pumping before that happens and leave a partial vacuum - just like the Airscape.Mac Airscapes and other such containers displace the air inside the canister, they don't pump it out, but reduce the amount of air inside. If using a pump you can reduce the pressure inside to less than atmospheric so a partial vacuum, which as Dave says could leach oils etc out of the beans. Also as the beans gass off this vacuum will be reduced over time. Now I 'spose it depends on how much faff you want every time you open a container of beans, but I like the Airscapes simplicity and I would get pretty bored of pumping air out every time I wanted to grind some beans. Each to their own though.
