    Well dependant on the coffee I have still experienced a metallic taste with the stainless, but, I much prefer the stainless to use tho cannot offer an A/B comparison on the taste

    I used a stove pot for years. Aluminium then stainless. Sometimes the coffee I bought gave a more metallic taste than others. I always found segafrezo to be one of the most metallic tasting in the stove top

    By the way, I tried one click coarser again and the sour last sip came back however it pulled at 25-30s

    So grinding finer, the finest setting on my porlex, pretty much clears up the sour last sip, but, even with a light tamp it's taking maybe 50s to pull a double. Should I make an issue of this or be content that the sourness has gone?

    Yes I have tried stirring. Either way it seems to still have the sour edged last sip. Seems strange to me

    So what are people's routines/suggestions for cleaning/maintenance for a classic? I bought a used one and it didn't come with a blank disc which if I understand correctly is used to "back flush"? How often should this be done,and should I be using something to clean the tank as well?
